TURKEY & SPINACH ENCHILADA Adobo Seasoning
Makes 20 400⁰F

1 pound ground turkey
1 tablespoon EVOO
1 small white onion
2 tablespoons Adobo Seasoning, or to taste
8 ounces fresh spinach, chopped
15 ounces black beans, rinsed & drained
8 ounces cream cheese, softened
20 corn tortilla shells
1 cup sharp cheddar cheese, shredded

1. Place EVOO in a large skillet and cook with ground turkey and onion until turkey in cooked and crumbled. Add Adobo Seasoning and chopped spinach. Once spinach has wilted, about three minutes, add black beans and cream cheese. Stir until heated and well blended. Set aside.
2. Pre-heat oven to 400⁰F. Soften tortilla shells by microwaving for a few seconds. Fill each shell and roll up. Place seam side down in a 9 X 13 baking dish. Top with cheddar cheese and bake 15 to 19 minutes.

NOTE: Black Bean or Fajita Seasoning can be substituted for the Adobo Seasoning.
