TEX-MEX TURKEY & BLACK BEAN SAUTE Adobo Seasoning
Serves 6

Cooking spray
1 teaspoon canola oil
1 large onion, chopped
2 medium banana peppers, sweet red or green bell pepper
1 ¼ pounds ground turkey breast (ground chicken or beef may be substituted)
1 ½ tablespoons Adobo Seasoning
14 ounces diced tomatoes, fire roasted with garlic
15 ounces black beans, rinsed and drained
¼ cup water
¾ cup fresh cilantro, chopped
1 cup romaine lettuce, shredded
18 tortilla chips, broken up
1 medium lime, cut into wedges for garnish

1. Coat a large nonstick skillet with cooking spray and place over medium high heat; add oil. When oil is hot, add onion and peppers; sauté until softened and lightly charred or golden in spots, about 6 to 7 minutes.
2. Add ground turkey; brown meat, breaking it up as it cooks, about 4 minutes. Stir in Adobo Seasoning.
3. Add tomatoes, beans and water; bring to a simmer. Cover and simmer, stirring occasionally, to blend flavors, about 5 minutes.
4. Stir in cilantro; remove from heat. Serve topped with lettuce and tortilla chips. Drizzle with fresh lime if desired.
