SPINACH & CHICKEN SKIILLET DINNER Traditional Italian Seasoning
2 cups uncooked whole wheat noodles
¾ cup chopped onions
2 cups sliced fresh mushrooms
2 teaspoons EVOO
1 can (14-1/2 ounces) diced tomatoes, un-drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
¾ cup spaghetti sauce
2 cups cubed cooked chicken breast
1 – 10 ounce package frozen chopped spinach, thawed and squeezed dry
¼ cup shredded Parmesan
2 tablespoons Traditional Italian Seasoning
½ cup shredded part-skim mozzarella cheese
1. Cook noodles according to package directions.
2 .Meanwhile, in a large skillet, sauté mushrooms in oil until tender. Add garlic & onion; sauté 30 seconds longer. Stir in tomatoes, soup, spaghetti sauce, chicken, spinach, Parmesan cheese and Traditional Italian Seasoning. Cook for 7 to 10 minutes or until heated through, stirring occasionally.
3. Drain noodles; toss with chicken mixture. Sprinkle with mozzarella cheese.
