LEEK & GARLIC PASTA (w) CHICKEN Leek & Garlic Pesto
1 pound of pasta
4 tablespoons Leek & Garlic Pesto
⅓ cup plus 1 tablespoon EVOO
½ cup water
3 tablespoons grated Parmesan cheese
14 ounce can diced tomatoes, drained
¼ cup white wine
½ cup chopped onion
1 cup cooked chicken, diced
Salt & pepper to taste
Grated cheese, optional
1. Mix Leek & Garlic Pesto with ⅓ EVOO and ½ cup water, and 3 tablespoons Parmesan cheese, set aside.
2. Cook pasta according to package directions.
3. Heat 1 tablespoon EVOO in a pan, add onion and sauté until soft. Add tomatoes and wine to the onions, cook for about a minute or until most of the liquid has evaporated.
4. Add onion mixture and prepared Leek & Garlic Pesto to the pasta and stir gently to mix. Add grated cheese, if desired.
Optional Ingredients: Cooked sausage, mushrooms, zucchini, or roasted red peppers.
