FRIED RICE Oh! SO Garlic

3 cups cooked rice
1 tablespoons Oh! So Garlic Seasoning
2 tablespoons sesame oil
1 small white onion, chopped
1 cup frozen peas & carrots mix, thawed
2-3 tablespoons soy sauce (more or less to taste)
2 eggs, lightly beaten
2 tablespoons chopped green onions

1. Preheat a large skillet or wok to medium heat. Pour Sesame oil in bottom of skillet, add white onion, peas and carrots. Fry until tender.
2. Slide the onion, peas and carrots to the side, and pour the egg onto the other side. Using a spatula, scramble the eggs. Once cooked mix the eggs with the vegetables.
3. Add the rice to the skillet, pour in the soy sauce.
4. Stir/fry the rice and vegetables until heated through and combined. Top with chopped green onion.
