BEEF WRAPPED ASPARAGUS Chili Chipotle Oil
Makes 12 servings
2 teaspoons lime juice
2 teaspoons Oh! so Garlic! Seasoning
½ cup Chili Chipotle Oil
⅛ teaspoon salt
⅛ teaspoon fresh ground black pepper
12 fresh asparagus, blanched in salt water
1 strip loin steak (about 1 pound), semi frozen
½ cup fresh Parmesan cheese, shaved
To make marinade:
Combine lime juice, Oh! so Garlic! Seasoning and Chili Chipotle Oil in a small bowl. Place in a marinating dish or large re-sealable plastic bag.
To prepare beef wrapped asparagus:
- Season semi frozen beef steak with salt and fresh ground black pepper, cut into 12 long thin stripes. Wrap each strip around one asparagus spear, add to the marinade and chill one hour or overnight.
- Heat a large sauté pan to medium-high and add wrapped beef asparagus. Cook until beef is nicely browned.
- Remove to plate and garnish with Parmesan curls (use a vegetable peeler to make curls).
