MEDITERRANEAN ROASTED VEGETABLES Sweet Bell Pepper
3 tablespoons olive oil
1 medium sweet onion, sliced
1 medium zucchini, sliced
1 yellow pepper, sliced
1 sweet red pepper, sliced
1 medium eggplant, cubed
4 cloves garlic, chopped
2 tablespoons Sweet Bell Pepper Seasoning
Salt & pepper to taste
1. Heat oil in a large frying pan or wok.
2. Saute garlic & onion until translucent.
3. Add remaining vegetables and Sweet Bell Pepper Seasoning.
4. Toss well and cook until zucchini is tender.
5. Salt & pepper to taste.
