GRILLED CHICKEN TENDERS (w) ROASTED GRAPE TOMATOES Double Roasted Garlic Oil
Serves 4
Chicken:
1 tablespoon grated lemon rind
2 tablespoons fresh lemon juice
¼ cup Double Roasted Garlic Oil
2 garlic cloves, minced
1½ pounds chicken tenders
½ teaspoon salt
¼ teaspoon Garlic Pepper
Tomatoes:
2 cups grape tomatoes
¼ cup Double Roasted Garlic Oil
2 tablespoons chopped fresh parsley
1 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1 tablespoon capers
⅛ teaspoon salt
⅛ teaspoon Garlic Pepper
1. To prepare chicken, combine first 4 ingredients in a large zip lock bag. Add chicken to bag; seal. Marinate in refrigerator at least one hour.
2. To prepare tomatoes, combine tomatoes and oil in an 8 inch square baking dish; toss gently, bake in 425º F oven for 18 minutes or until tomatoes are tender. While tomatoes are cooking, grill chicken.
3. Remove chicken from bag: discard marinade. Sprinkle chicken evenly with salt & Garlic Pepper. Place chicken on grilling rack coated with cooking spray; grill 3 minutes on each side or until done.
4. When tomato mixture is done; combine with remaining ingredients and pour over cooked chicken.
