CHIPOTLE BEEF NOODLES Chipotle Seasoning
Serves 4

2 tablespoons unsalted butter
¼ cup all purpose flour
2 cups low-sodium chicken broth
1 small can mild green chilies
⅔ pound lean ground beef
1 small yellow onion, finely chopped
1 tablespoon Oh So Garlic Seasoning
2 tablespoons Chipotle Seasoning
1 tablespoon tomato paste
Salt & pepper to taste
10 ounces wide egg noodles
2 cups grated Cheddar cheese
1 cup chopped fresh cilantro leaves

1. Melt 1 tablespoon butter in a medium size saucepan over medium heat. Stir in flour using a wooden spoon. Let the paste cook, stirring constantly, about 2 minutes. Gradually stir a little of the chicken broth into the flour mixture. Keep adding the broth a little at a time until you have a smooth paste, then whisk in the remaining broth. Add the tomato paste and green chilies, bring to a simmer and the reduce heat just to keep warm until meat mixture is ready.
2. Melt the remaining tablespoon of butter in a large skillet over medium-high heat. Add ground beef, onion, Oh so Garlic and Chipotle Seasoning. Cook meat, breaking it up as it cooks until the meat is browned. Pour off some of the fat from the skillet, then add the sauce to the meat, stir together and salt & pepper to taste.
3. Cook noodles according to package directions or until they are al dente. Drain noodles and stir into the meat sauce. Sprinkle with cheese and cilantro before serving.
