BAKED ZUCCHINI BOATS Basil Garlic 10oz Oil
Serves 4
4 small zucchini
3 plum tomatoes, sliced
½ cup sliced mini portabella
4 ounces mozzarella or Parmesan Cheese, shredded
¼ cup Basil Garlic Oil
Salt & pepper to taste
- Preheat 375˚F
- Slice the zucchini in half and slice off the bottom to stable, core out center seeds place on a baking sheet lined with parchment paper.
- Shake the bottle of Basil Garlic Oil vigorously and pour about a ¼ cup into a small dish. Brush the zucchini with the oil making sure to get plenty of the delicious herbs.
- Top with sliced tomatoes & mushrooms, salt and pepper to taste. Evenly top with cheese and bake for 20 to 30 minutes until tender and cheese is slightly browned.
