Another delicious Lesley Elizabeth recipe!


BAKED TOMATO SLICES & PASTA Basil Garlic 10oz Oil & Wicked Good Pepper


2½ pounds plum tomatoes
¾ cup Basil Garlic Oil
1 tablespoon Wicked Good Pepper
2 tablespoon fresh basil (chopped)
1 pound thin pasta
Salt & pepper to taste
Asiago Cheese

  1. Preheat 425ºF
  2. Core tomatoes and slice width-wise into ¼-inch slices.  Arrange tomato slices on a baking pan; sprinkle with Wicked Good Pepper.  Drizzle with Basil Garlic Oil and top with fresh basil.  Bake until tender and edges are browned, about 25 minutes.
  3. While tomatoes are baking cook pasta until al dente, reserving a splash of pasta cooking water.  Toss pasta with tomatoes, oil, & splash of pasta water.
  4. Salt and pepper to taste.  Top with fresh grated Asiago cheese.

Note: Any flavor Lesley Elizabeth Oil may be substituted for this recipe!
