BAKED TOMATO SLICES & PASTA Basil Garlic 10oz Oil & Wicked Good Pepper
2½ pounds plum tomatoes
¾ cup Basil Garlic Oil
1 tablespoon Wicked Good Pepper
2 tablespoon fresh basil (chopped)
1 pound thin pasta
Salt & pepper to taste
- Preheat 425ºF
- Core tomatoes and slice width-wise into ¼-inch slices. Arrange tomato slices on a baking pan; sprinkle with Wicked Good Pepper. Drizzle with Basil Garlic Oil and top with fresh basil. Bake until tender and edges are browned, about 25 minutes.
- While tomatoes are baking cook pasta until al dente, reserving a splash of pasta cooking water. Toss pasta with tomatoes, oil, & splash of pasta water.
- Salt and pepper to taste. Top with fresh grated Asiago cheese.
Note: Any flavor Lesley Elizabeth Oil may be substituted for this recipe!
