SOUTHWESTERN SALAD Jalapeno Cilantro Seasoning
Serves 8

6 tablespoons mayonnaise
1 tablespoon Jalapeno Cilantro Seasoning
1 ½ tablespoons water
1 green onion, minced
1 ½ tablespoons fresh lime juice
2 teaspoons sugar
½ teaspoon chili powder
15 ounces canned black beans, rinsed & drained
1 ½ cups frozen corn, thawed
2 cups grape tomatoes
1 sweet red pepper, cut into thin strips
2 romaine hearts, cut into thick shreds
Salt and pepper to taste.

1. In a small bowl, whisk together mayonnaise, Jalapeno Cilantro Seasoning, water, green onion, lime juice, sugar and chili powder until smooth. Cover and refrigerate until ready to use.
2. In a large bowl, layer remaining ingredients in order listed; cover and refrigerate until ready to serve.
3. To serve, spoon salad ingredients onto a plate. Stir dressing and then drizzle over salad; toss well to coat. Salt & pepper to taste.
