SIMPLE PORK TENDERLOIN Hickory & Garlic Seasoning
3 – 4 Servings

1 tenderloin of pork
4 tablespoons oil
6 tablespoons Hickory & Garlic Seasoning
1/3 cup heavy whipping cream
1 teaspoon brandy

1. Trim the end off the tenderloin and discard or keep for another dish. Cut the remaining piece into or 1” slices. Sprinkle both sides of each slice with Hickory & Garlic Seasoning.
2. Heat the oil in a skillet until just smoking. Add the slices and brown briefly on both sides, about 1 minute per side. Reduce the heat to low, cover and cook until the thermometer reads 150°F or until the center is just slightly underdone. Remove the meat and keep warm, covered: it will finish cooking as it sits.
3. Scrape the pan juices and add the heavy cream and brandy. Bring to a boil, stirring. Set 2 or 3 slices of meat on each plate and drizzle with the sauce from the skillet.
