TUSCAN BEAN & KALE SOUP Traditional Italian Seasoning
1 pound lean ground pork or Italian Sausage
6 cups chopped fresh kale
2 to 3 cans (15½ ounces each) great northern beans, rinsed and drained
1 (28 ounce) can crushed tomatoes
4 large carrots, finely chopped (about 3 cups)
1 medium onion, chopped
2 tablespoons Traditional Italian Seasoning, or to taste
6 cups chicken broth
Salt & pepper to taste
Grated Parmesan cheese
1. In a skillet, cook ground pork over medium heat until no longer pink, breaking into crumbles. Drain. Transfer to a 5 quart slow cooker.
2. Add kale, beans, tomatoes, carrots, onion, Traditional Italian Seasoning, and chicken stock to slow cooker. Cover and cook on low 8 to 10 hours or until vegetables are tender. Top each serving with Parmesan cheese.
