PINEAPPLE CHICKEN (w) JALAPENO GLAZE Jalapeno Cilantro
Makes 4 Servings
¼ cup pineapple juice
2 tablespoons brown sugar (packed)
1 tablespoon yellow mustard
¾ cup ¼-inch cubes fresh pineapple
1 table spoon Sweet Bell Pepper Seasoning
2 tablespoons Jalapeno Cilantro Seasoning
4 boneless chicken breast halves (about 1¾ pounds)
1. Preheat oven to 400°F. Bring pineapple juice, brown sugar, and mustard to boil in a small saucepan, stirring to dissolve sugar.
2. Reduce heat to simmer and stir in Sweet Bell Pepper and Jalapeno Cilantro Seasoning. Simmer until glaze thickens slightly.
3. Line baking sheet with foil. Place chicken on sheet and brush with glaze. Bake 20 minutes and brush again with glaze. Continue baking about 5 minutes longer or until fully cooked. Let rest 5 minutes.
4. Spoon remaining glaze over top of chicken & serve.
