CAJUN POT ROAST – SLOW COOKED Cajun Seasoning
1 boneless beef chuck roast (2 to 2 ½ pounds)
3 tablespoons Cajun Seasoning
9 ounces frozen whole kernel corn
½ cup chopped onion
½ cup chopped green pepper
1 can (14.5 ounces) diced tomatoes, undrained
⅛ teaspoon black pepper
½ teaspoon red pepper sauce
Salt to taste
1. Spray inside of a 4 quart slow cooker with cooking spray. Rub entire surface of beef roast with Cajun Seasoning. Place beef in slow cooker. Top with frozen corn, onions and bell pepper.
2. In a small bowl, mix tomatoes, pepper and pepper sauce. Pour over vegetables and beef.
3. Cover; cook on low heat 8 to 10 hours.
4. To serve, cut beef into slices. Remove corn mixture with slotted spoon, and serve with beef.
