BAKED TOMATO SLICES & PASTA, Garlic & Green Herb Oil
2½ pounds plum tomatoes
¾ cup Garlic & Green Herb Oil
1 tablespoon Seasoned Pepper or fresh grind black pepper
2 tablespoon fresh basil (chopped)
1 pound thin pasta
Salt & pepper to taste
1. Core tomatoes and slice width-wise into ¼-inch slices. Arrange tomato slices on a baking pan; sprinkle with Seasoned Pepper. Drizzle with Garlic & Green Herb Dipping Oil and top with fresh basil. Bake until tender and edges are browned, about 25 minutes.
2. While tomatoes are baking cook pasta until al dente, reserving a splash of pasta cooking water. Toss pasta with tomatoes, oil, & splash of pasta water.
3. Salt and pepper to taste. Top with fresh grated Asiago cheese.
Note: Baked tomatoes can be layered onto bruschetta or sandwiches, or served as a cheese plate condiment.
Any flavor Lesley Elizabeth Oil may be substituted for this recipe!
