EASY CAJUN CHILI Cajun Seasoning
Serves 4 – 6
3 tablespoons olive oil
2 pound ground chuck beef (not lean)
4 tablespoons Cajun Seasoning, or to taste
1 pound bag frozen onion and pepper mix (Bird’s Eye), or frozen chopped onion
2 x 16 ounce jars roasted tomato salsa
15 ounce can red kidney beans, drained and rinsed
Shredded Cheddar, sour cream, corn chips (optional toppings)
1. In a large, deep skillet, heat the oil over high heat until very hot but not smoking. Add the beef and cook, stirring occasionally; until the meat is no longer pink (some clumps will remain).
2. Stir in the Cajun Seasoning, the frozen onion pepper mix and the salsa and simmer, uncovered, stirring occasionally for 20 minutes.
3. Stir in the beans and cook for a further 2 minutes. Serve with your favorite toppings.
