CAJUN SHRIMP PITAS Cajun Seasoning
2 tablespoons butter, melted
3 tablespoons Cajun Seasoning, or more to taste
2 pounds raw shrimp, peeled and deveined
½ cup mayonnaise
2 teaspoons Cajun Seasoning
1 teaspoon sweet pickle relish
½ teaspoon prepared mustard
8 pita pocket halves, warmed
1 cup shredded lettuce
8 thin slices tomato
1. In a small bowl, combine Mayonnaise, 2 teaspoons Cajun Seasoning, relish and mustard. Whisk until well blended, set aside.
2. In a medium bowl combine first three ingredients, toss until well blended. Sauté in medium skillet until cooked.
3. Spread mayonnaise mixture into warmed pita pockets. Fill with shrimp, lettuce and tomato slices
