CRUNCHY TURKEY SALAD Fig Balsamic Oil

Serve 4

 

⅓ cup Fig Balsamic Oil

1 tablespoon poppy seeds

¼ teaspoon freshly ground black pepper

1 large head Bibb lettuce

2 cups cooked turkey, diced

3 scallions, sliced

1 cup sliced almonds

1 cup chow mein noodles

 

  1. In a small bowl, whisk Fig Balsamic Oil, poppy seeds and pepper; set aside. 
  2. Clean and chop lettuce; you should have about 8 cups.  Transfer to a medium sized bowl and add the turkey, scallions, almonds and noodles.
  3. Toss with dressing and serve immediately.
