AVOCADO FRUIT SALAD Mango Tangerine Sugar
Serves 8
Dressing:
4 ounces EVOO
3 tablespoons cider vinegar
4 tablespoons Mango Tangerine Sugar
½ teaspoon salt
Salad:
2 medium avocados, peeled, pitted & sliced
2 pounds salad greens, torn
2 medium oranges, peeled & sectioned
1 large red grapefruit, peeled & sectioned
1 medium pear, sliced
½ pound green seedless grapes
1. In a small bowl, whisk together the first four ingredients and set aside.
2. Place sliced avocado in a bowl and drizzle with 2 tablespoons of dressing, set aside.
3. Combine all remaining ingredients in a large salad bowl and toss. Divide onto 8 serving plates and top with avocado mixture. Serve immediately.
