WATERMELON SALAD with FETA Jalapeno Cilantro Seasoning
Serves 8
8 cups cubed seedless watermelon, about ½ a melon
2 tablespoons Jalapeno Cilantro Seasoning
½ cup fresh mint, cut into thin ribbons
½ cup feta cheese crumbles
¼ cup fresh squeezed lime juice, 2 to 3 limes
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
1. In a small bowl combine the lime juice and the Jalapeno Cilantro Seasoning, set aside for about 5 minutes.
2. In a large bowl combine the watermelon cubes, mint and feta cheese. Pour over the lime juice mixture and sprinkle with salt and pepper. Stir well and serve cold.
