SPICY THAI SALAD Spice it Up Oil
Serves 4 – 6
1 pound Rotini or any pasta shape
1 pound large shrimp
1 cup Spice it Up Oil, divided
¼ cup peanut butter
1 small cucumber, chopped
1 large red bell pepper, chopped
1 small bunch scallions, chopped
1. Cook the Rotini according to package directions, drain and cool to room temperature.
2. Mix ½ cup Spice it Up Oil and peanut butter in a small bowl; stir until blended. Toss the mixture with the pasta. Use the remaining oil to marinate the shrimp.
3. Thread the shrimp onto wet bamboo skewers and cook on a hot grill. Chill.
4. Remove shrimp form skewers and toss together with pasta and vegetables.
NOTE: May substitute 1 pound boneless skinless chicken breast for shrimp.
