PENNE (w) SUNDRIED TOMATO PESTO CREAM Sundried Tomato Seasoning & Pesto
Serves 4

1 pound penne pasta
¼ cup water
1 cup diced tomatoes
1 cup heavy cream
4 tablespoons Sundried Tomato Seasoning & Pesto
3 tablespoons unsalted butter
⅛ teaspoon paprika
¼ cup chopped fresh basil
½ cup grated parmesan cheese
salt & pepper to taste

1. Bring 4 quarts water to boil in large pot. Meanwhile, melt butter in medium sauce pan over low heat, stir in Sundried Tomato Seasoning & Pesto, let simmer for 2 to 3 minutes. Stir in water and diced tomatoes, until thoroughly heated, add cream and paprika, and simmer until slightly thickened.
2. Add 1 tablespoon salt and pasta to boiling water and cook until al dente. Reserve ¼ cup cooking water, drain pasta, and return to pot. Add sauce and basil to pot and toss to combine, adding reserved pasta water as needed. Season with salt & pepper to taste. Serve sprinkled with parmesan cheese.
