BEEF FAJITA SALAD Fajita Seasoning
Serves 2

8 ounces beef steak, cut into thin strips
2 teaspoons Fajita Seasoning
1 tablespoon vegetable oil
½ cup sliced red or green bell peppers
⅓ cup sliced onion
11 ounces chopped lettuce
1 medium tomato, diced
¼ cup drained canned black beans
¼ cup sliced black olives
¼ cup shredded Cheddar cheese
Fiesta dressing (recipe below)

1. Sprinkle beef strips with Fajita Seasoning. In a large nonstick skillet sauté beef in oil over medium-high heat 3 to 4 minutes.
2. Add peppers and onion, sauté 2 to 3 minutes longer or until vegetables are tender-crisp.
3. Divide lettuce on two large plates. Spoon beef mixture over lettuce and arrange tomatoes, beans, olives and cheese over each. Serve with Fiesta Dressing, to taste. Refrigerate leftovers.

FIESTA DRESSING:

½ cup plain yogurt
¼ cup sour cream
2 tablespoons ketchup
2 tablespoons minced onion
1 tablespoon lime juice
1 tablespoon finely chopped cilantro
1 tablespoon Fajita Seasoning

Whisk all ingredients together and serve. Refrigerate any leftovers.
