GUACAMOLE STUFFED EGGS Guacamole Seasoning
Makes 12 servings
6 hard cooked eggs
½ large, fully ripe avocado
1 tablespoon fresh squeezed lime juice
¼ cup mayonnaise
1 tablespoon Guacamole Seasoning
12 cilantro leaves
Salt & pepper to taste
1. In a small bowl mix lime juice with Guacamole Seasoning; set aside.
2. Cut cooled eggs in half lengthwise. Remove yolks; process in a food processor with avocado and mayonnaise until smooth.
3. Add Guacamole Seasoning and process again until well blended. Salt and pepper to taste. Spoon into egg whites.
4. Top each egg with a cilantro leave. Chill at least one hour before serving.
