CHIPOTLE CHICKEN DRUMETTES Chili Chipotle Oil
Chicken & Marinade
6 garlic cloves, minced
2 teaspoons grated lime peel
2 teaspoons coarse salt
2 teaspoons fresh oregano, chopped
½ cup lime juice
⅓ cup Chili Chipotle Oil
24 chicken drumettes or party wings
½ cup mayonnaise
½ cup sour cream
1 tablespoon Dijon mustard
3 tablespoons Chipotle Seasoning
1 teaspoon grated lime peel
1. Place garlic, 2 teaspoons grated lime peel, salt, and Chili Chipotle Oil in a non reactive shallow pan large enough to hold chicken in one layer. Add chicken; turn to coat completely with marinade. Cover and refrigerate 2 to 4 hours.
2. Combine all mayonnaise ingredients in a small bowl; refrigerate 30 minutes.
3. Heat grill or broiler. Remove chicken from marinade; discard marinade. Grill chicken over medium heat or coals, or broil on preheated broiler pan, 12 to 14 minutes or until browned and juices run clear, turning once. Serve with mayonnaise.
