SHRIMP & COUSCOUS SALAD

Makes 4 servings
Ingredients:
- ¾ cup uncooked couscous
- 1 cup water
- 4 tablespoons + 2 teaspoons Extra Virgin Olive Oil (EVOO), divided
- ¼ teaspoon salt
- 4 ounces fresh green snap beans
- 1 medium sweet red pepper, cored, seeded, and chopped
- 12 ounces medium shrimp, cooked and peeled
- 2 tablespoons Lesley Elizabeth Lemony Dill Seasoning
- 3 tablespoons chicken broth
- 1 tablespoon fresh lemon juice
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon ground black pepper (or to taste)
Instructions:
- In a saucepan, bring 1 cup of water, ¼ teaspoon salt, and 2 teaspoons EVOO to a boil. Stir in couscous, cover, and remove from heat. Let stand for 5 minutes, then fluff with a fork and let cool.
- In a large salad bowl, combine green snap beans, red bell pepper, shrimp, and the cooled couscous.
- In a small bowl, whisk together 3 tablespoons chicken broth, 1 tablespoon lemon juice, 4 tablespoons EVOO, 2 tablespoons Lemony Dill Seasoning, ¼ teaspoon salt, and ¼ teaspoon black pepper.
- Pour the dressing over the salad mixture and toss gently to combine. Chill or serve immediately.
