Zesty Salmon Cilantro Burgers with Jalapeño Lime Mayo

Salmon Cilantro Burgers

Featuring Jalapeno & Cilantro Seasoning

Serves 4

Ingredients:

  • ¼ cup mayonnaise
  • ¾ tablespoon Jalapeno & Cilantro Seasoning
  • 1 tablespoon fresh lime juice
  • ⅛ teaspoon freshly ground black pepper
  • 16 ounces canned salmon, bones and skin removed
  • ¼ cup dry breadcrumbs
  • 2 tablespoons Jalapeno & Cilantro Seasoning
  • 2 tablespoons Shallots, Scallions & Leeks Seasoning or chopped green onions
  • 2 tablespoons fresh lime juice
  • ¼ teaspoon freshly ground black pepper
  • 1 egg, beaten
  • Cooking spray or Extra Virgin Olive Oil
  • 4 seeded hamburger buns, toasted
  • 12 (¼ inch thick) slices English cucumber
  • 4 leaf lettuce leaves

Instructions:

  1. In a small bowl, combine the mayonnaise, ¾ tablespoon Jalapeno & Cilantro Seasoning, 1 tablespoon lime juice, and black pepper. Cover and chill.
  2. In a food processor, blend together salmon, breadcrumbs, 2 tablespoons Jalapeno & Cilantro Seasoning, Shallots, Scallions & Leeks Seasoning (or green onions), lime juice, pepper, and beaten egg until well combined. Shape into 4 patties about ¾ inch thick.
  3. Heat a grill pan over medium-high heat. Lightly coat with cooking spray or a drizzle of Lesley Elizabeth Extra Virgin Olive Oil. Cook patties for 2 minutes on each side, until golden and cooked through.
  4. To assemble: Spread lime mayo mixture on the bottom bun, add salmon patty, top with 3 cucumber slices and a lettuce leaf, then finish with the top bun. Serve immediately.
