Artichoke & Lemon Pasta with Oh! So Garlic!
This easy and elegant bow tie pasta dish is elevated with tender asparagus, tangy artichokes, and a vibrant citrus twist—made even better with our flavorful Oh! So Garlic! Seasoning blend. Whether you’re hosting or meal prepping, this one’s a crowd pleaser!
Ingredients:
- 2 ½ teaspoons salt, divided
- ½ pound fresh asparagus, trimmed and cut into 1½-inch pieces
- 4 cups uncooked bow tie pasta
- 3 tablespoons extra virgin olive oil
- 14 oz. water-packed quartered artichoke hearts, drained
- 3 tablespoons Lesley Elizabeth Oh! So Garlic! Seasoning
- 5 tablespoons water
- 1 cup crumbled goat cheese
- 1 tablespoon grated lemon peel
- 3 tablespoons fresh lemon juice
- ⅓ cup grated Parmesan cheese
Instructions:
1. Hydrate the Seasoning:
In a small bowl, combine Oh! So Garlic! Seasoning and 5 tablespoons of water. Set aside to allow flavors to bloom.
2. Blanch the Asparagus:
In a large pot, bring 6 quarts of water and 2 teaspoons salt to a boil. Add asparagus and cook 1–2 minutes until crisp-tender. Immediately plunge into ice water to stop the cooking. Drain and pat dry.
3. Cook the Pasta:
In the same pot, cook bow tie pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
4. Sauté the Artichokes:
In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium-high heat. Add artichoke hearts and cook 3–4 minutes until lightly browned. Add the prepared Oh! So Garlic! (drained if watery) and cook for 1 minute more.
5. Toss Everything Together:
Add the pasta to the skillet with artichokes. Stir in blanched asparagus, goat cheese, lemon peel, lemon juice, the remaining 2 tablespoons of EVOO, and remaining ½ teaspoon salt. Toss gently to coat, adding reserved pasta water as needed for a silky finish.
6. Serve and Garnish:
Divide pasta among plates and top with freshly grated Parmesan cheese. Serve warm or at room temperature.
