Tuscan Lentil Stew with Spinach & Italian Herbs

This hearty lentil and potato stew is a nourishing, protein-packed comfort food, perfect for chilly nights and busy days alike. It’s gluten-free, vegetarian-friendly (when using vegetable broth), and full of bold, herbaceous flavor.

Tuscan Lentil Stew with Traditional Italian Seasoning

Ingredients:

  • 1¼ cups chicken broth (use full 32 oz carton)
  • 1 cup dried lentils, sorted and rinsed
  • 1½ pounds russet potatoes, cut into ¾-inch pieces
  • 2 cups chopped onions
  • 2 cans (14.5 oz each) diced tomatoes, undrained
  • 2 tablespoons Lesley Elizabeth Traditional Italian Seasoning
  • 1 teaspoon salt
  • ¼ teaspoon crushed red pepper flakes (optional, for a kick)
  • 1 bag (5–6 oz) fresh baby spinach leaves, chopped
  • Shaved or shredded Parmesan cheese (for garnish)

Instructions:

  1. Coat a 4 to 5-quart slow cooker with non-stick spray.
  2. Add lentils, potatoes, onions, diced tomatoes, Traditional Italian Seasoning, salt, red pepper flakes, and the full 32-ounce carton of chicken broth. Stir to combine.
  3. Cover and cook on LOW for 8 to 10 hours, or until lentils and potatoes are tender.
  4. Just before serving, stir in chopped baby spinach until wilted.
  5. Ladle into bowls and top with shaved or shredded Parmesan cheese.
