Ingredients:
- 1 pound lean ground pork or Italian sausage
- 6 cups chopped fresh kale
- 2 to 3 cans (15½ ounces each) great northern beans, rinsed and drained
- 1 (28 ounce) can crushed tomatoes
- 4 large carrots, finely chopped (about 3 cups)
- 1 medium onion, chopped
- 2 tablespoons Traditional Italian Seasoning, or to taste
- 6 cups chicken broth
- Salt & pepper to taste
- Grated Parmesan cheese for garnish
Instructions:
- In a skillet over medium heat, cook the lean ground pork or Italian sausage until no longer pink, breaking it into crumbles. Drain excess fat.
- Transfer the cooked meat to a 5-quart slow cooker.
- Add chopped kale, rinsed great northern beans, crushed tomatoes, finely chopped carrots, chopped onion, and Traditional Italian Seasoning to the slow cooker.
- Pour in the chicken broth and stir to combine all ingredients.
- Cover and cook on low for 8 to 10 hours, or until vegetables are tender and flavors have melded together.
- Season with salt and pepper to taste.
