Cheesy Turkey and Spinach Tortilla Bake

We’ve taken lean ground turkey, folded in vibrant spinach, and blended it with creamy richness. But what sets this recipe apart is the seasoning—Adobo Seasoning. With its smoky, savory profile, it transforms this dish from simple to spectacular.

Ingredients

  • 1 lb ground turkey
  • 1 tbsp Extra Virgin Olive Oil
  • 1 small white onion, diced
  • 2 tbsp Adobo Seasoning (or to taste)
  • 8 oz fresh spinach, chopped
  • 15 oz canned black beans, rinsed and drained
  • 8 oz cream cheese, softened
  • 20 corn tortillas
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9x13” baking dish.
  2. In a large skillet over medium heat, warm the olive oil. Add ground turkey and diced onion. Cook until turkey is browned and crumbled.
  3. Sprinkle in the Adobo Seasoning and stir in the spinach. Let it wilt for about 3 minutes.
  4. Mix in the black beans and cream cheese. Stir gently until fully combined and heated through. Remove from heat.
  5. Microwave corn tortillas for 15–20 seconds until pliable.
  6. Spoon filling into each tortilla and roll tightly. Place seam-side down in your baking dish.
  7. Top with shredded cheddar. Bake for 15–19 minutes or until cheese is melted and bubbly.

Make It Yours
