Tomato Pesto Sandwich with Leek & Garlic Pesto

Serves 4

Ingredients:

  • 4 ciabatta rolls
  • 8 tablespoons Lesley Elizabeth Leek & Garlic Seasoning & Pesto
  • ⅓ cup extra virgin olive oil (EVOO)
  • ½ cup water
  • 8 ounces Swiss, Fontina, or your favorite melting cheese, sliced
  • 2 ripe tomatoes, sliced
  • 4 lettuce leaves

Instructions:

  1. Prepare the Leek & Garlic Pesto according to the package directions using EVOO and water. Preheat your broiler.
  2. Slice open the ciabatta rolls. Spread a generous amount of the prepared pesto on the bottom half of each roll. Top with a slice of cheese and a slice of tomato.
  3. Place the open-faced rolls on a baking sheet and broil until the cheese melts and the bread is slightly toasted—watch closely to prevent burning.
  4. Remove from the broiler, top with a lettuce leaf, and close each sandwich with the top half of the roll. Slice in half and serve warm.
