Tomato & Mozzarella Skewers with Balsamic

Simple, fresh, and bursting with flavor, these Tomato & Mozzarella Skewers are the perfect appetizer for any gathering. Made with juicy grape tomatoes, creamy mozzarella, fresh basil, and finished with Lesley Elizabeth Aged Balsamic Vinegar and Rosemary, Garlic & Herb Oil, these skewers are a fast and beautiful dish that everyone will love.

Ingredients (Makes 26 Appetizers)

  • 1 pint grape tomatoes, cut in half
  • ⅛ cup Lesley Elizabeth Rosemary, Garlic & Herb Oil
  • 4 ounces fresh mozzarella (ciliegine or mini balls)
  • 1 teaspoon Lesley Elizabeth Aged Balsamic Vinegar
  • Fresh basil leaves
  • Toothpicks or small skewers

Instructions

  1. In a small bowl, whisk together the Rosemary, Garlic & Herb Oil and Aged Balsamic Vinegar. Set aside.
  2. On each toothpick or skewer, layer one tomato half, a basil leaf, a mozzarella ball, and another tomato half.
  3. Place the assembled skewers in a shallow serving dish and drizzle the oil and vinegar mixture over the top.
  4. Let marinate for 15–20 minutes before serving for best flavor.

Flavor Variations

This recipe is incredibly flexible! Try using any of our infused oils for a twist—like Sun-Dried Tomato Oil or Roasted Garlic Oil. If your chosen oil already includes vinegar, simply omit the Aged Balsamic to keep the balance just right.
