These savory Summer Corn Cakes are light, fluffy, and packed with fresh summer flavor. Our bold Jalapeno Cilantro Seasoning adds the perfect kick to the corn batter and salsa topping, creating a spicy-sweet balance you’ll crave all season long.
Ingredients:
- ¾ cup whole wheat flour
- ½ cup yellow cornmeal
- 2 teaspoons baking powder
- ¾ teaspoon salt, divided
- ½ teaspoon freshly ground black pepper, divided
- 1 cup sour cream
- 2 large eggs
- 2 tablespoons Avocado Oil (divided)
- 1¼ cups fresh corn kernels (about 2 ears)
- 2 tablespoons Jalapeno Cilantro Seasoning (or more, to taste)
- ½ cup diced yellow squash
- ¼ cup chopped green onions
- ¼ cup chopped fresh basil
- 1½ teaspoons rice vinegar
- 1 medium tomato, chopped
Instructions:
- In a large bowl, whisk together flour, cornmeal, baking powder, ½ tsp salt, and ¼ tsp black pepper.
- In a separate bowl, mix sour cream, eggs, Jalapeno Cilantro Seasoning, and 1 tbsp Avocado Oil until smooth.
- Add the sour cream mixture and fresh corn to the dry ingredients. Stir until just combined.
- Preheat a nonstick griddle or skillet over medium-high heat.
- Divide batter into 8 equal portions (about ⅓ cup each). Shape into patties and place on the griddle.
- Cook each side for 3–4 minutes or until golden brown and cooked through.
- Meanwhile, in a small bowl, combine squash, green onions, basil, rice vinegar, chopped tomato, remaining 1 tbsp oil, and remaining salt and pepper. Toss to create fresh salsa.
- Serve corn cakes warm and top each with a generous scoop of salsa.
