Ingredients:

  • 6 slices of bacon, chopped
  • 2 apples, peeled and chopped
  • 2 tablespoons Shallot, Scallions & Leeks Seasoning
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • ¼ cup chopped pecans
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup Dijon mustard
  • ½ pork loin (about 3–4 pounds)

Instructions:

1. Prepare the Filling:

Preheat oven to 325°F. In a large skillet, cook the chopped bacon over medium heat until crispy. Drain off all but ½ tablespoon of bacon fat.

Add the chopped apples and Shallot, Scallions & Leeks Seasoning to the skillet. Cook for 4–5 minutes until apples begin to soften. Stir in the minced garlic and cook for another 2 minutes until fragrant. Add the chopped rosemary and pecans, then remove from heat.

2. Butterfly and Season the Pork:

Using a sharp knife, carefully butterfly the pork loin so it opens like a book. Season the inside with salt and pepper. Spread the bacon-apple filling evenly over the pork, leaving a ½-inch border.

3. Roll, Tie, and Roast:

Roll the pork loin tightly, jelly-roll style. Secure with butcher's twine to hold its shape. Place the stuffed pork in a roasting pan and rub the exterior with Dijon mustard.

Roast uncovered for about 1 hour and 25 minutes, or until the internal temperature reaches 155°F. Baste occasionally with pan juices during roasting.

4. Rest and Serve:

Let the pork loin rest for 15 minutes before slicing. Serve with pan drippings or alongside seasonal vegetables for a complete, flavorful meal.
