Stuffed Chicken Breasts with Rosemary Garlic Seasoning

Stuffed Chicken Breasts with Rosemary & Garlic Seasoning

Serves 4

Ingredients:

  • 1 small onion, chopped
  • 1 celery rib, chopped
  • 1 garlic clove, minced
  • 3 tablespoons butter, divided
  • 2 teaspoons chicken bouillon granules
  • ½ cup boiling water
  • 3 cups bread crumbs
  • 3 tablespoons parsley flakes
  • 3 tablespoons Rosemary & Garlic Seasoning
  • 8 boneless skinless chicken breast halves (about 4 oz each)
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons fresh rosemary
  • 4 slices provolone cheese, cut in half
  • 8 ounces chicken broth

Instructions:

  1. Preheat oven to 350°F. Coat a 13 x 9-inch baking dish with cooking spray.
  2. In a nonstick skillet, sauté onion, celery, and garlic in 2 tablespoons of butter until tender.
  3. In a bowl, stir together boiling water, chicken bouillon, bread crumbs, parsley flakes, Rosemary & Garlic Seasoning, and sautéed vegetable mixture. Let cool slightly.
  4. Flatten chicken breasts to ¼-inch thickness between plastic wrap. Season with salt and pepper.
  5. Spoon stuffing onto each breast and top with half a slice of provolone. Roll up tightly and secure with toothpicks.
  6. Place stuffed chicken into prepared baking dish. Melt remaining tablespoon of butter and brush over the top of each roll-up.
  7. Pour chicken broth into the dish to keep the chicken moist while baking.
  8. Cover and bake for 25–30 minutes or until chicken reaches an internal temperature of 170°F.
  9. Remove toothpicks before serving. Garnish with fresh rosemary if desired.
