Spicy Ham & Egg Omelet Cups with Cajun Seasoning

Ham & Egg Omelet Cups with Cajun Seasoning

Makes: 12 muffin cups

Ingredients:

  • 8 ounces ham, cubed
  • 10 large eggs
  • ½ cup diced onions
  • ½ cup diced bell peppers (any color)
  • 2 to 3 tablespoons Lesley Elizabeth Cajun Seasoning
  • ¾ cup shredded cheddar cheese, divided
  • ¼ cup chopped mushrooms
  • Non-stick cooking spray

Instructions:

  1. Preheat oven to 350⁰F (175⁰C).
  2. In a large mixing bowl, beat the eggs until fully blended. Stir in diced onions, bell peppers, Cajun Seasoning, ham, mushrooms, and ½ cup of the cheddar cheese.
  3. Line a muffin pan with 12 paper liners and spray each liner lightly with cooking spray.
  4. Spoon about ⅓ cup of the egg mixture into each cup, filling nearly to the top.
  5. Bake for 20 minutes. Remove from oven, sprinkle remaining cheese over each omelet cup, then return to oven for 5 more minutes or until a knife inserted comes out clean and the tops are golden.
