Spicy Cajun Breakfast Hash with Sausage & Eggs

Cajun-Style Hash with Lesley Elizabeth Cajun Seasoning

Serves: 4

Ingredients:

  • 3 tablespoons extra virgin olive oil (EVOO), divided
  • 6 ounces andouille sausage, chopped
  • 1½ cups red-skinned potatoes, diced
  • 2 tablespoons Cajun Seasoning, divided
  • 1 green bell pepper, seeded and chopped
  • 1 small onion, chopped
  • 6 ounces sliced mushrooms
  • Salt, to taste
  • 8 large eggs (optional)

Instructions:

  1. Preheat a 12-inch heavy-bottomed or cast iron skillet over medium-high heat. Add enough EVOO to coat the bottom, then sauté chopped andouille sausage until lightly browned, about 4–5 minutes. Remove from pan and set aside.
  2. Lower heat to medium. Add more EVOO if needed. Toss in the diced red potatoes and 1 tablespoon Cajun Seasoning. Sauté for about 10 minutes, stirring occasionally until lightly browned.
  3. Add another drizzle of EVOO. Stir in bell pepper, onion, mushrooms, and the remaining tablespoon of Cajun Seasoning. Sauté for 20–25 minutes, stirring occasionally, until vegetables are tender. Adjust seasoning with more Cajun spice or salt if needed.
  4. Return sausage to the skillet and mix well to reheat everything together.

Optional:

In a separate skillet, cook eggs your favorite way—scrambled, fried, or sunny-side up. Plate hash and top with eggs for a complete, protein-packed Cajun breakfast.

Make It Your Own:

Try adding diced jalapeños or swapping in sweet potatoes for a flavorful twist. Use our Creole Seasoning for a milder flavor or combine it with Cajun for layered spice!
