Chipotle Pulled Pork with Garlic, Lime & Honey
Smoky, spicy, and irresistibly tender—this Chipotle Pulled Pork is the perfect recipe for tacos, sandwiches, or serving over rice. Made with our signature Chipotle Seasoning, fresh lime juice, garlic, honey, and Extra Virgin Olive Oil, this slow-cooked pork loin is juicy, flavorful, and easy to make. Whether you're roasting in the oven or using a slow cooker, this recipe delivers every time.
Ingredients (Serves 4):
- ½ cup chopped onion
- 2 tablespoons honey (or substitute ¼ cup orange marmalade)
- 1 teaspoon ground cumin
- ⅛ teaspoon ground cinnamon
- 9 large garlic cloves, peeled
- 3 tablespoons Chipotle Seasoning
- 1 lime (juice and segments)
- 2 tablespoons Extra Virgin Olive Oil (EVOO), divided
- 1 to 1¼ pounds boneless pork loin, trimmed
- ¾ teaspoon kosher salt
- ½ cup chicken broth
Instructions:
1. Make the Marinade
In a food processor, combine onion, honey, cumin, cinnamon, garlic, and Chipotle Seasoning. Peel and segment the lime over a bowl to catch the juice; discard peel. Add lime juice, lime segments, and 1 tablespoon EVOO to the food processor and blend until smooth.
2. Marinate the Pork
Scrape the chipotle marinade into a resealable plastic bag. Add the pork loin, seal the bag, and refrigerate for 2 to 3 hours to absorb all that bold flavor.
3. Sear and Roast
Preheat oven to 325˚F. Heat a small Dutch oven over medium-high heat. Add the remaining 1 tablespoon of EVOO. Remove pork from the marinade (reserve the marinade). Season pork with salt, then brown it in the pot for about 8 minutes, turning to sear all sides.
4. Braise to Perfection
Add chicken broth and reserved marinade to the pot. Bring to a boil while scraping up any browned bits. Return the pork to the pot, cover, and place in the oven. Braise for 2½ hours or until the pork is fork-tender. Shred the pork directly in the pot and mix it into the sauce for extra flavor.
Optional Slow Cooker Method:
Place browned pork, marinade, and broth into a crock pot. Cook on low for about 4 hours or until tender. Shred and serve.
