Pomegranate Pork Loin with Pomegranate Balsamic Vinegar

This savory-sweet slow cooker pork loin recipe is an easy and elegant way to serve up big flavor with minimal effort. Juicy, tender pork loin is glazed with our vibrant Pomegranate Balsamic Vinegar and enhanced with bold Shallots, Scallions & Leeks Seasoning for a balanced profile of fruity acidity and deep umami. Whether you're preparing a holiday dinner or a hearty weeknight meal, this dish is always a crowd-pleaser.

Ingredients:

  • 3 to 4 pound boneless pork loin
  • ¾ cup Pomegranate Balsamic Vinegar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ¼ cup Shallots, Scallions & Leeks Seasoning
  • Cooking spray

Instructions:

1. Prep the Pork:

Rub pork loin generously with salt and black pepper. Place into a crockpot lightly coated with cooking spray to prevent sticking.

2. Make the Glaze:

In a small bowl, combine Pomegranate Balsamic Vinegar with Shallots, Scallions & Leeks Seasoning. Let the mixture sit for a couple of minutes to allow the flavors to meld.

3. Slow Cook:

Spread the vinegar-seasoning mixture evenly over the pork. Cover and cook on low for 3½ to 4 hours, or until the internal temperature reaches 160°F.

4. Rest and Serve:

Remove pork loin from the crockpot and allow it to rest for 5 minutes before slicing. Serve with your favorite sides like roasted vegetables or creamy mashed potatoes.

Why This Recipe Works:

  • The Pomegranate Balsamic Vinegar creates a rich, tangy glaze that tenderizes the meat.
