Slow Cooker Beef Stew with Italian Seasoning

Slow Cooker Beef Stew with Traditional Italian Seasoning

Serves 4

Ingredients:

  • 1 pound lean beef, cut into 1-inch cubes
  • 2 teaspoons extra virgin olive oil (EVOO)
  • 1 cup chopped onion
  • 2 cups sliced mushrooms
  • 1 medium potato, cubed (about 1 cup)
  • 1 rib celery, sliced
  • 2 large carrots, sliced
  • 3 medium garlic cloves, minced
  • 15 ounces canned pinto beans
  • 2 cups beef broth, divided
  • 15 ounces canned crushed tomatoes
  • 2 tablespoons Lesley Elizabeth Traditional Italian Seasoning
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions:

  1. Place the cubed beef into a 5-quart slow cooker.
  2. In a large skillet, heat the EVOO over medium-high heat. Sauté the onion, mushrooms, celery, and garlic for about 5 minutes until softened and fragrant.
  3. Add the sautéed vegetable mixture to the slow cooker. Stir in the sliced carrots and cubed potatoes.
  4. Divide the pinto beans in half. Place one half directly into the slow cooker. Blend the remaining beans with ½ cup beef broth until smooth, then add to the slow cooker to create a rich texture.
  5. Add the remaining beef broth, crushed tomatoes, Traditional Italian Seasoning, salt, and pepper. Stir well to combine.
  6. Cover and cook on HIGH for 6 hours or on LOW for 8 hours, until beef and vegetables are tender and the flavors are fully developed.
