Slow Cooked Italian Pork with Polenta
This savory Italian-style pork roast is slow-cooked to perfection with a blend of garlic, herbs, and tomatoes, and served over creamy, cheesy polenta. Our Traditional Italian Seasoning and Oh! So Garlic Seasoning infuse every bite with bold, authentic Mediterranean flavor. It's the perfect recipe for cozy weeknights or Sunday family dinners.
Ingredients (Serves 4–6):
- 1 tablespoon olive oil
- 2½ pounds lean pork roast
- ½ teaspoon salt, divided
- ¾ teaspoon freshly ground black pepper, divided
- 2 cups sliced yellow onion
- 1 cup sliced yellow bell pepper
- 2 tablespoons Oh! So Garlic Seasoning (or more to taste)
- 2 cans (14.5 oz) diced tomatoes, drained
- 2 tablespoons Traditional Italian Seasoning
- 1 teaspoon balsamic vinegar
- 2 teaspoons Worcestershire sauce
- 2 cups water
- 1 cup milk
- ¾ cup instant polenta
- 1 tablespoon grated Parmesan cheese
Instructions:
1. Sear the Pork
Heat a large skillet over medium-high heat and add olive oil. Sprinkle pork roast with ¼ teaspoon salt and ¼ teaspoon black pepper. Sear pork for 10 minutes, turning to brown all sides. Transfer the pork to a slow cooker.
2. Sauté the Vegetables
In the same skillet, add sliced onion and bell pepper. Sauté for about 5 minutes until softened, then transfer to the slow cooker with the pork.
3. Season and Slow Cook
Add drained diced tomatoes, remaining salt and pepper, Oh! So Garlic Seasoning, and Traditional Italian Seasoning to the slow cooker. Cover and cook on low for 7½ hours. Then stir in balsamic vinegar and Worcestershire sauce. Cook uncovered for 30 more minutes. Shred pork using two forks and stir to combine.
4. Make the Polenta
While pork finishes cooking, combine water and milk in a saucepan. Bring to a boil, reduce heat to low, and slowly whisk in polenta. Cook for 4 minutes, stirring frequently, then remove from heat and stir in Parmesan cheese and remaining pepper.
5. Serve
Spoon creamy polenta into shallow bowls and top with generous portions of shredded Italian pork. Season with additional salt and pepper to taste. Enjoy!
