Ingredients:
- Unsalted butter, softened, for brushing
- 1 pound spaghetti
- 3 tablespoons extra virgin olive oil
- 1 medium onion, minced
- 2 garlic cloves, minced
- 1 pound Portabella mushrooms, cut into 1-inch pieces
- Kosher salt
- Fresh ground black pepper
- 1 cup Lesley Elizabeth Spinach Seasoning
- 3 large eggs
- 1 ¾ cups whole milk
- 3 cups shredded Fontina cheese (about 10 ounces)
- 1 cup ricotta cheese
- 1 cup finely grated Parmesan cheese
Instructions:
1. Prepare the Pan & Pasta:
Preheat the oven to 425⁰F. Tightly wrap the outside of a 9-inch springform pan with foil and brush the inside with softened butter. In a large pot of salted boiling water, cook spaghetti until barely al dente. Drain and set aside.
2. Sauté the Veggies:
In a large skillet, heat extra virgin olive oil over medium-high heat. Add the minced onion and garlic; cook until sizzling, about 1 minute. Add Portabella mushrooms, season with salt and pepper, and cook until browned, stirring occasionally.
3. Make the Filling:
