Oven Roasted Carrots with Adobo Seasoning

This easy oven roasted carrots recipe is a flavorful vegetable side dish made with Adobo Seasoning and Lesley Elizabeth Extra Virgin Olive Oil. Perfect for weeknight dinners or holiday meals, these roasted carrots come out tender, golden, and packed with warm spices.

Ingredients:

  • 2 pounds medium carrots, cut into 2-inch pieces
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Adobo Seasoning

  • A dash of ground ginger
  • A sprinkle of cinnamon
