Red Pepper & Tomato Soup with Herbes de Provence

Ingredients:
- 2 teaspoons extra virgin olive oil (EVOO)
- 3 cloves garlic, minced
- 1 cup onion, diced
- 1 medium carrot, peeled and diced
- 2 teaspoons Lesley Elizabeth Herbes de Provence
- 2 large sweet red peppers, chopped
- 15 ounces chicken broth
- 28 ounces crushed tomatoes
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup half and half creamer
- 1 teaspoon sugar
Instructions:
- In a medium stock pot, heat EVOO over medium-low heat. Sauté garlic and onion for about 1 minute until fragrant.
- Add diced carrots and cook for about 5 minutes, until onions are tender.
- Stir in Herbes de Provence and cook for 1 minute to release the herbal aromas.
