Red Pepper Tomato Soup with Herbes de Provence

Red Pepper & Tomato Soup with Herbes de Provence

Serves 6

Ingredients:

  • 2 teaspoons extra virgin olive oil (EVOO)
  • 3 cloves garlic, minced
  • 1 cup onion, diced
  • 1 medium carrot, peeled and diced
  • 2 teaspoons Lesley Elizabeth Herbes de Provence
  • 2 large sweet red peppers, chopped
  • 15 ounces chicken broth
  • 28 ounces crushed tomatoes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup half and half creamer
  • 1 teaspoon sugar

Instructions:

  1. In a medium stock pot, heat EVOO over medium-low heat. Sauté garlic and onion for about 1 minute until fragrant.
  2. Add diced carrots and cook for about 5 minutes, until onions are tender.
  3. Stir in Herbes de Provence and cook for 1 minute to release the herbal aromas.
  4. Add chopped red peppers and cook until softened, about 5 more minutes.
  5. Pour in chicken broth and crushed tomatoes. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes.
  6. Stir in salt, pepper, sugar, and half and half creamer. Carefully puree soup in small batches using a blender or immersion blender until smooth.
  7. Reheat if necessary and serve hot. Garnish with a swirl of cream or fresh herbs for added flair.
