Ingredients:

  • 5 lbs peeled and diced potatoes
  • 2 lbs frozen whole kernel corn
  • 1 lb celery, chopped
  • 3 large sweet onions, diced
  • 3 (32 oz) packages unsalted chicken stock
  • 2 cups half & half or heavy cream
  • 2 tablespoons vegetable oil
  • ½ jar Leek & Garlic Pesto & Seasoning
  • Salt and pepper to taste

Instructions:

  1. In a large stock pot, sweat Leek & Garlic Seasoning, celery, and onions in vegetable oil until soft and translucent.
  2. Add diced potatoes and chicken stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. Stir in frozen corn and half & half or heavy cream. Bring back to a boil.
  4. Turn off heat, cover, and let chowder sit for 10-15 minutes to blend flavors.
  5. Taste and adjust seasoning with salt and pepper as needed.
  6. Serve warm and enjoy the rich, creamy flavors.
