Poached Salmon with Lemony Dill Cucumber Sauce

Serves 4

Ingredients:

  • 1 seedless cucumber
  • 1 small red onion, thinly sliced
  • ⅛ cup red wine vinegar
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoons Lemony Dill Seasoning, divided
  • 1½ teaspoons horseradish sauce
  • 8 oz plain yogurt or sour cream
  • 3 cups vegetable broth
  • ¾ cup dry white wine
  • 4 slices fresh lemon
  • 4 salmon fillets (4–5 oz each)

Instructions:

  1. Prepare the cucumber sauce: Slice the cucumber in half lengthwise, remove seeds, and cut diagonally into thin slices. In a large bowl, combine cucumber slices and red onion. Add red wine vinegar, sugar, salt, pepper, and 2 tablespoons of Lemony Dill Seasoning. Let sit at room temperature for 1 hour, stirring occasionally, then drain well.
  2. In a small bowl, whisk together yogurt (or sour cream), horseradish sauce, and the remaining 2 tablespoons of Lemony Dill Seasoning. Stir into the drained cucumber-onion mixture. Chill until ready to serve.
  3. Poach the salmon: In a deep skillet, combine vegetable broth, white wine, 1 tablespoon Lemony Dill Seasoning, and lemon slices. Bring to a boil, reduce heat, and simmer for 5 minutes.
  4. Add salmon fillets to the skillet, cover, and simmer gently until the salmon is just cooked through and flakes easily, about 8–10 minutes depending on thickness.
  5. Transfer the salmon to plates and top generously with the chilled cucumber dill sauce. Garnish with lemon slices and a sprinkle of extra Lemony Dill Seasoning, if desired.
