One Pot Cajun Chicken & Sausage Pasta

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1½ pounds chicken breasts, diced
  • 8 ounces smoked sausage, sliced (or Andouille for extra heat)
  • 3 cloves garlic, minced
  • ½ large yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 8 ounces mushrooms, sliced
  • 16 ounces linguine pasta
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese, plus 2 tablespoons for garnish
  • 3 to 4 tablespoons Lesley Elizabeth Cajun Seasoning (to taste)

Instructions:

1. Sauté the Proteins:

In a large stock pot, heat olive oil over medium heat. Add diced chicken and sprinkle with Cajun Seasoning. Stir to coat. Add sliced sausage and continue cooking for 5–10 minutes until the chicken is cooked through and browned.

2. Add the Veggies:

Stir in garlic, onion, red and green peppers, and mushrooms. Cook for 3–5 minutes, stirring often, until the vegetables begin to soften and become aromatic.

3. Add Pasta & Broth:

Break linguine in half and add to the pot. Pour chicken broth over the mixture and stir well. Cover and bring to a boil. Reduce heat to a simmer and cook covered for about 10 minutes, stirring frequently, until the pasta is tender and most of the liquid is absorbed.

4. Make It Creamy:

Stir in heavy cream and Parmesan cheese. Mix until the cheese is melted and sauce is smooth and creamy. Sprinkle with the remaining Parmesan and serve immediately.
